Tagliatelle & tagliolini are a traditional type of pasta from the Emilia-Romagna & Marche area or region of Italy. Single pieces of Tagliatelle are long; flat ribbons type pasta. It can be served with a variety of sauces, though the classic is a meat sauce or Bolognese sauce. Tagliolini is another variety of Tagliatelle i.e., long & cylindrical, not long & flat. Tagliatelle is made with egg pasta. The traditional ratio is one egg to 100 grams of flour.
