Fettuccine Alfredo

This is the most celebrated fettuccine pasta recipe among pasta lovers. It is a creamy and savory dish that every foodie should try at least once in their lifetime.

  • 700 grams dry fettuccine pasta
  • ¾ pint heavy cream
  • 1 cup butter
  • 1 dash garlic salt
  • ½ cup Parmesan cheese
  • ¾ cup grated Romano cheese
  • Pepper and salt to taste

Method Of Preparation

  1. Add salt to the water and boil it in a large pot. Next, add pasta and cook for 8-10 mins until al dente; drain.
  2. Melt butter into a pan over low flame. Add pepper, garlic salt, and salt along with cheese. Stir the mixture on medium heat to melt the cheese and to achieve thick white sauce.
  3. Pour the cooked pasta into the sauce. Use a considerable amount of pasta to grease it so that no extra sauce is left.
  4. Serve while hot.

Bistro Chicken Fettuccine

A  yummy pasta recipe that you can enjoy for lunch as well as dinner.

  • ½ pound dry fettuccine
  • 1 pound boneless, skinless chicken breast (cut into 2-inch strips)
  • 2 tbs virgin olive oil, divided
  • ½ cup crumbled goat cheese
  • ¼ cup julienned prosciutto
  • 2 chopped tomatoes
  • 1 minced shallot
  • ¼  tsp salt
  • 1/8 tsp red pepper flakes
  • ¼ tsp pepper
  • 1 tsp Dijon mustard
  • ¼ tsp dried tarragon/ ½ tsp fresh minced tarragon
  • 2 tbs finely chopped dry apricots
  • ¼ cup chopped walnuts (toasted)
  • ¼ cup white wine/ chicken broth

Method Of Preparation

  1. Cook fettuccine in boiling water until al dente and drain. Reserve ½ of boiled pasta water and transfer pasta into the serving plate; keep warm.
  2. Heat 1 tsp oil in a large frying pan on medium flame. Sprinkle pepper and salt over the chicken. Add the chicken piece to the pan and cook for 4-6 minutes or until it loses pink color. Remove chicken and add remaining oil to the skillet. Stir along with apricots, tomatoes, shallot, prosciutto, and red pepper flakes. Let it sauté for 4-6 minutes before returning the chicken to the pan.
  3. Next, stir mustard and wine into the mixture. Bring it to boil until the amount of liquid reduces slightly. Pour the mixture over cooked fettuccine and garnish with tarragon and cheese. Toss the mixture to combine ingredients and add remaining pasta water in order to soften the pasta. Top with walnuts and enjoy the recipe.


  1. You can substitute prosciutto with either pancetta or sliced bacon.
  2. Toasting the nuts can bring much more flavor to the recipe.
  3. Don’t skip apricots as they add subtle sweet-savory flavor to the dish making it more delicious.
