Beef Cannelloni

Prep Time: 45mins

Cooking Time: 1hr and 20mins

Servings: 12

Ingredients

  • 1kg minced beef
  • 400 gms of dry cannelloni tubes
  • 2 jars X 660gms of passata with basil
  • 1 tbs olive oil
  • 4 crushed cloves of garlic
  • Large pinch of caster sugar
  • 600ml whole milk
  • 50gms plain flour
  • 50gms butter
  • 140gm grated parmesan
  • 140gm soft cheese with herbs and garlic

Method Of Preparation

  1. Dry-fry beef by breaking it with the help of wooden spoon for 10 mins until brown on medium heat. Remove and keep aside. Add oil and chopped onions fry for 5mins till translucent and add garlic to the pan. Next, add beef, 1 ½ jar of passata and caster sugar. Let saute for 20mins.
  2. Heat butter and add flour when it melts. Stir for a minute. Pour the milk gradually while stirring to avoid lumps. Bubble for a few mins while stirring. Remove from stove and stir in a soft seasoned cheese until it completely dissolves. And your white sauce is ready.
  3. Pour tomato sauce in 1 ovenproof foil containers or 2-3 baking dishes. Fill the cannelloni tubes with beef mixture and place them on the sauce. Next, pour white sauce and garnish with parmesan. Heat oven at the 180ºC/200ºC gas/fan and cook for 40-50 mins until toppings are golden and pasta is tender.

Cannelloni With Spinach And Cheese

Prep Time: 20mins

Cooking Time: 35mins

Servings: 4

Ingredients

  • 120gms dried cannelloni
  • 12 cups washed and dried spinach
  • 1 ½ tsp olive oil
  • 1 finely chopped onion
  • 4 tbsp all-purpose flour
  • 2 ½ tbsp unsalted butter
  • 1 pinch salt and ground pepper
  •  cup ricotta cheese
  • 2 eggs
  • ¾ grated parmesan
  • 1 pinch nutmeg

Method Of Preparation

  1. Preheat oven to 375ºF/190ºC.
  2. Heat oil on medium flame, add onion and fry for 2-3mins before adding spinach. Sprinkle salt, cover and cook for 2-3mins on high heat until leaves wilt. Move to a colander and drain excess water. Chop and set aside.
  3.  Melt the butter in a pan, and add flour while stirring on low heat. Next, pour milk in a fast stream while stirring vigorously for 2-3mins so as to avoid lump formation. Bring to boil by reducing the flame and let the mixture simmer for 5-mins. Stir as it simmers. Season with pepper and salt.
  4. Take the pan off the stove and add ¾ of total parmesan and ricotta cheese followed by eggs, grated nutmeg, spinach and then mix.
  5. Spread a few spoons of the mixture on the base of the baking dish. Fill the cannelloni with the spinach mixture and place them in the baking dish in a layer. Cover the top with remaining cheese and spinach.
  6. Bake for 30-45mins until golden brown in color. Let it sit for 5 mins at normal temperature before you serve.
