Ingredients to be used:
9-10 tomatoes, 3-4 onions, 3 tablespoon of canola oil, Fresh garlic, black pepper powder,chili flakes, Oregano , mixed herbs, salt and cheese.
Boil the tomatoes.
Take an oven, and fill it with half with water. Using a spoon or any other tool, place nine tomatoes for at least 30 to 40 seconds. Do not let it boil for way too long than that the tomatoes may get bad. Let it simmer in the water, you on the other hand bring out ice cold water, put it in a big oven or pot. Keep it at rest for a while and let the water take out all the heat from the tomato , it will make it easy to cut after that.
Using a big spoon take out the tomatoes one by one and place it in the ice-cold water.
Peel them gently using your hands. Make sure they do not get squashed beforehand. After that using a not so sharp knife, you have to be cautious that you do not hurt yourself. Take the tomatoes you put in ice water and chop them into little pieces. So that when you sauté it in the next step it can properly mix with all the other ingredients.
Take a pan and 3 tablespoon oil. You can use any type of oil you want. Though Canola oil is used for the best flavor. Let it be warm for a while. Then add 3 tablespoons of chopped garlic. Sauté it for a while, chop three onions and add them to the frying pan. And keep frying, add one tablespoon of black pepper powder with one or half red chili flakes. If you want to you can add oregano too. It will enhance the flavor. Mix them well, then add the chopped tomatoes we kept.
Lower the flame
On a low flame fry it well, because if you keep frying the tomatoes on high flame they will burn easily and your sauce won’t taste good, then add 2 tablespoon of tomato puree. One tablespoon of salt.
Add some mixed herbs and cheese into it. And fry it till it smells nice and look good. You have to make sure that it is neither too much fried nor too less fried. The texture of the sauce depends on it. If you are confused if it is the right time, look for the color and if the onions have been mixed well you are going in the right direction.
Follow all these steps one by one, and then turn the stove off, take a utensil out and serve your pasta sauce hot.

Always go for fresh and organic tomatoes, because this the main ingredient if it will be old tomatoes, they will make the sauce taste sour and it won’t be comfort food then.
If possible, use a when you boil the tomatoes and when the Garlics are fried up and tomatoes have been added keep the flames low.
