1. Meatballs and Spaghetti (Mexican Style)

Preparation Time: 30 minutes
Total Time: 1 Hour and 15 minutes
Yields: Serves 6


– Turkey, Minced 1 pound
– Chilli powder, Mexican -style 1 and ½ teaspoons
– Guajillo chili powder, 1 teaspoon
– Salt, a ½ teaspoon
– Black pepper, a ½ teaspoon
– Parmesan cheese, 1 tablespoon
– 1 egg
– Olive oil, 1 tablespoon
– Half Onion, finely chopped
– Jalapeno pepper, small, seeded and grated, 1
– Anaheim Chilli pepper, 1/2, remove seed and mince
– Tostada shells, fine crumbs, 2
– Bread crumbs, ¼ cup
– Spaghetti, 16 ounces
– Tomatoes, diced, 1 can
– Half Onion, diced
– Chipotle chili, finely chopped, 1
– Spaghetti sauce, 24 ounces
– Taco seasoning mix, 1 tablespoon


• Heat the oven at 350°F. On the baking sheet, place an aluminum foil. Grease it lightly with cooking spray.

• Place the minced turkey in a bowl. Over it, sprinkle the guajillo and Mexican-style chili powder, black pepper, salt, and Parmesan cheese.

• In the meat mixture, add olive oil, egg, chopped onion, Anaheim pepper, and jalapeno pepper.

• Mix until blended evenly. Sprinkle bread crumbs and tostada crumbs and again mix till the bread crumbs are completely integrated into the mixture.

• Form small meatballs with the meatball mixture. Place the meatballs on the ready baking sheet.

• Bake the meatballs for 40 minutes or until light brown and center is not pink. After 20 minutes, turn the meatballs for cooking evenly.

• Take a large pot with lightly salted water over high heat. While the water boils, add the spaghetti. Keep it for 12 minutes until the pasta is firm and thoroughly cooked. Drain the water and keep the pasta separately.

• Stir the diced tomatoes, chipotle chili, diced onion, taco seasoning, and spaghetti sauce in a saucepan. Bring it to simmer at medium-high heat for 10-15 minutes. Later turn the heat to medium-low.

• Stir in the ready meatballs into the sauce — cook for 5 minutes.

• Pour the sauce with spaghetti over spaghetti while serving.

2. Spaghetti Carbonara

Total Time: 40 minutes
Yields: Serves 8


– Spaghetti, 1 pound
– Olive oil, 1 tablespoon
– Diced bacon, 8 slices
– Olive oil, 1 tablespoon
– Chopped onion, 1
– Minced garlic, 1 clove
– Dry white wine, ¼ cup
– 4 eggs
– Parmesan cheese, ½ cup
– Black pepper and salt, 1 pinch
– Fresh parsley, chopped, 2 tablespoons
– Parmesan cheese, grated, 2 tablespoons


• Cook the spaghetti in a large pot half-full of lightly salted boiling water until thoroughly cooked yet firm. Drain the water and rinse the pasta with cold water. Add 1 tablespoon olive oil and toss it well. Set it aside.

• Take a large skillet. In it, cook the chopped bacon till it is slightly crispy. Remove it from the skillet, and soak into the paper towels.

• Reserve a little bacon fat for later. Add the remaining olive oil into the used skillet. Add the onions and cook on medium heat until translucent.

• Add in garlic, and then cook for 1 minute. If you want, add wine into it and cook for one minute more.

• Transfer the cooked bacon to the pan. In it add the pasta. Toss to coat everything with the sauce and heat. Add some more olive oil if it looks dry.

• Stir in the eggs and cook through. Toss with frequently until the eggs are set. Add half cup Parmesan cheese in it and toss the pan.

• Stir in the salt and Pepper for taste. Serve with Parmesan cheese and parsley on top of it.
